No-Fail Sugar Cookies
Ingredients
- 2 cups salted butter, room temperature
- 2 cups granulated sugar
- 5 cups all-purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs
- 2 teaspoons vanilla
Directions
- Preheat oven to 180° C (160° C fan-forced).
- Beat butter and sugar together with a mixer on medium-high speed until pale and creamy, about two minutes.
- In a separate large bowl, whisk together dry ingredients.
- Add eggs and vanilla to creamed butter and sugar. Mix well.
- With mixer on lowest speed, add flour mixture a little at a time to butter mixture. Mix until the flour is completely incorporated and the dough comes together. (Dough will be crumbly. You may need to turn out the dough onto a flat surface and finish mixing it by hand.)
- Roll out dough, and cut out with cookie cutters.
- Bake on baking sheet for 8-10 minutes or until just beginning to turn brown around the edges.
Notes
If you plan to refrigerate or freeze a batch, roll it into a log first and wrap in cling film. Then for round cookies you can just cut slices to your desired thickness.
This is an easy recipe to adapt: swap in a butter substitute for a dairy-free version, or gluten-free flour for a gluten-free version, or a sugar substitute for a sugar-free version.
