Corn and Rice Fritters
Ingredients
- 1 cup rice
- 1 can corn kernels, drained
- 1 large carrot
- 1 shallot (or 2 green onions)
- 3 slices ham (or bacon rashers)
- Black pepper to taste
- 4 eggs
- 1/2 cup plain flour
- Oil for pan fry, approx 1/3 cup total
Directions
- Cook rice per usual method.
- Set aside to cool for 5 minutes.
- Grate the carrot. Place in a clean tea towel or cloth and squeeze out excess moisture.
- Dice the ham.
- Dice the shallot or slice the green onions.
- Add carrot, corn, ham, and shallot to rice. Mix until combined.
- Season to taste with pepper.
- Stir in eggs and flour until combined.
- In a frying pan over medium heat, add 1/3 cup portions of rice mixture.
- Cook for 3 minutes each side or until golden brown.
