Corn and Rice Fritters

  1. Cook rice per usual method.
  2. Set aside to cool for 5 minutes.
  3. Grate the carrot. Place in a clean tea towel or cloth and squeeze out excess moisture.
  4. Dice the ham.
  5. Dice the shallot or slice the green onions.
  6. Add carrot, corn, ham, and shallot to rice. Mix until combined.
  7. Season to taste with pepper.
  8. Stir in eggs and flour until combined.
  9. In a frying pan over medium heat, add 1/3 cup portions of rice mixture.
  10. Cook for 3 minutes each side or until golden brown.
